On a run of hundreds of trays, 'about half done' isn't enough: a cook coming back after an interruption needs to know exactly where they stand. CalcMenu tracks plating tray by tray — 142 of 280 — so none is skipped or doubled, special meals included.

Lot traceability and recall in hours

In a recall you must link every loaded tray to its ingredient lots in hours, not days. CalcMenu assigns a lot number to each batch and ties it to its supplier lots — audit-ready traceability, targeted recall.

US stations working for major airline caterers now see FSMA 204 traceability show up as a contract clause, not an option. That goes beyond a simple lot number — it requires retained, queryable traceability event records.
