RevPASH was popularized by Cornell's Sheryl Kimes in the 1990s, adapting the hotel industry's RevPAR to restaurants — it rewards filling seats AND raising average spend, not just one or the other. There's no universal 'good' number: a coffee counter and a steakhouse will never post the same RevPASH, so track your own trend over time rather than comparing across concepts.

- What's a good RevPASH?
- There isn't a universal target — RevPASH varies enormously by concept, price point, and service style. A fast-casual counter and a fine-dining room will have completely different "normal" numbers. What matters is your own trend over time and comparison against your own past periods, not an industry-wide benchmark.
- How is RevPASH different from average check?
- Average check only tells you what guests spent once seated. RevPASH factors in how many hours you were open and how many seats you have, so it captures both how full the room was and what people spent — a strong average check with empty seats still produces a weak RevPASH.
- What are 'seat turns'?
- Seat turns is covers served divided by seats available — how many times, on average, each seat was used during the period. It's the occupancy half of RevPASH, the same way occupancy % is the occupancy half of a hotel's RevPAR.
- Where do I get these numbers?
- Total revenue and covers served come from your POS report for the period; seats available and hours open are numbers you already know about your own dining room.
