HACCP and tray assembly at scale

Cold chain, blast chilling and repetitive assembly leave little room for error. CalcMenu standardises HACCP sheets and assembly plans for every flight.

Hitting the boarding time, flight after flight

Across dozens of flights, the batch that gets missed is the one furthest behind its wheels-up time — not the most visible one. CalcMenu ranks production by real slack (time left versus trays still to plate) and surfaces the flight about to miss its aircraft, before it's too late.

Trays right, down to the count

On a run of hundreds of trays, 'about half done' isn't enough: a cook coming back after an interruption needs to know exactly where they stand. CalcMenu tracks plating tray by tray — 142 of 280 — so none is skipped or doubled, special meals included.

Lot traceability and recall in hours

In a recall you must link every loaded tray to its ingredient lots in hours, not days. CalcMenu assigns a lot number to each batch and ties it to its supplier lots — audit-ready traceability, targeted recall.

One production pass, from prep to boarding.

SPML codes, passenger counts, HACCP checks and tray assembly live on one production screen, in real time. Every station sees the same board: who's plating what, what's left, what boards soon — no radio, no retyping. A special meal is confirmed before it's marked done, the lot is attached, and the board surfaces the tightest flight on its own.
